Chocolate Eclairs

I made these babies this evening! Heavenly! I used Raymond Blanc’s recipe for the choux pastry and the crème patissière. For the glaze I I just melted dark chocolate and added a little cream. Delish!!






  1. Have to try this recipe. I had to bin three lots of choux last Friday (Delia & some random french blogger) because they just didn’t rise. Flat as pancakes all three batches were. I don’t even like choux (sacre bleu!) but it’s like challenge feckin Anna now. I HAVE to get it right.
