It was my aunts birthday this week and she had told me a while ago that she wanted to try Queen of Puddings. So what better occasion than your birthday to try a tasty treat! This pudding was beautiful, and really easy to bake. Firstly you make a simple custard, make sure to warm the milk on low heat, never let it boil. Then you add the custard to breadcrumbs and bake it in a moderate oven and be sure to put the container that the custard is in into a baking tray with hot water in it that comes halfway up the side of the custard. Bake it for about 20 – 30 mins or until the custard is set. Warm raspberry jam and evenly spread on top of the custard. I found it a little too sweet using the jam so next time I make it I’ll use fresh fruit stewed. At this point I whisked egg whites to make the meringue and then popped this on top of the jam and custard. Put back in the oven and bake until the meringue is crisp on the outside. Eat and enjoy!
